Old Fashioned Corn & Potato Chowder

This chowder is perfect for a chilly night when your looking for something easy to throw together and full of good old fashioned creamy comfort!

Old Fashioned Corn & Potato Chowder
Serves 4-6

Ingredients

3 cups corn
(frozen or canned are both work great!)
2 cups
potatoes, diced (I prefer red new potatoes, but any work fine)
2 Tablespoons Butter
1/4 cup onion, diced
1/2 - 3/4 teaspoon salt
1/8 teaspoon black pepper
1 & 1/2 cup HOT water (chicken broth is wonderful too!)
2 cups hot Milk
2 Tablespoons flour, Mixed with 3 Tablespoons cool water.

Sliced Green Onions and Shredded Cheddar Cheese, for garnish.

*Optional and Delicious Add-In's.*
*1 cup Diced, cooked, Ham
*6 slices crisp-cooked bacon, crumbled
*1/8 teaspoon Cayenne pepper (adds a WONDERFUL zing!)

Directions

1.) In a large pot, combine all ingredients EXCEPT milk & Flour/Water.
2.) Cook, over med-high heat until potatoes are fork-tender.
3.) Add Milk and Flour/Water, stirring well.
4.) Bring to a boil. stirring frequently, gently boil for approx 10 minutes, until thickened.
5.) Serve, in bowls, garnished with green onions and cheese.
6.) Enjoy!

  1. Sounds yummy! I'm a little embarrassed to say this...but if only it were cold enough for soup! It's been the high 70's for over a week here in So Cal. I'm counting my blessings, but ... really? At least let us pretend it's winter by making it cold enough for a sweater!
